What is Indian Vindaloo?


Landed in India with the Portuguese, the carne de vinha d'Alhos became Indianized by becoming Vindaloo. The turned wine or wine vinegar in which the Portuguese marinate pork has been replaced by palm vinegar, and ginger and chilli have integrated the aroma team; mustard seeds and curry leaves added a warm touch.
Finally, the use of duck, lamb or chicken instead of pork allowed Muslims to take advantage of it. Vindaloo has thus become a flamboyant dish in Goan cuisine.
