The Indian papad or papadum is thin and crispy. There are many varieties that differs from the ingredient with which they are made: lentils, rice, chick peas, potatoes or tapioca. The ingredient and manufacturing techniques and cooking change their taste. It is often flavored with cumin, pepper, garlic and green chilli.

 

How to use papads

In Indian cuisine, it can be served with a thali, at the end of the dinner for digestion, or served with tea. They are served plain or topped with pickles or chutneys. They can be grilled on the gas to high heat, fried, or cooked in the microwave or the toaster!
The papadums are also used as an ingredient in Indian recipes such as papad ki Sabji (as a vegetable) or Aloo papad (with potato).

Papads are used as an apetizer, or as a digestive aid. It can be conserved for a long time and offers a large variety of tastes, flavors and uses.
