In India it is called gudh or jaggry (Hindi). Palm sugar is made from the sap of certain palm trees, which is boiled until it thickens and then left to harden. It can be found in various forms, including solid blocks, liquid or granules.
Its taste is similar to brown sugar but with additional aromas of caramel. It is a basic food in the cuisine of South Asia, an alternative to sugar cane.
It is often used in the composition of chutneys (tamarind sauce for example) or sweet salty dishes but also in dessert recipes.
