In India, mango is called Aam (Hindi) and mango powder is called Amchoor. This fruit is grown here for thousands of years and it is considered the king of fruits. Mango powder is made from sun-dried green mangoes. It becomes a brownish powder.
In Indian cooking, the role of mango powder is to add moisture without adding acidity. It gives ia kind of sweet acidity. It is a component of recipies such as samosas, Kofta, Aloo ki Sabji (Potato), Kaddu ki Sabji (Pumpkin) or stuffed Paranthan.
The mango is of course also consumed as a fruit, but also in creams or in drinks, Amra, or in the preparation of chutney or pickle.
Mango powder can be stored for a long time. It is rich in beta-carotene, vitamin A and vitamin C.
