Fenugreek is an aromatic plant, not only used as a spice but also as vegetable and herb. Also used in Indian cooking, fenugreek seeds are yellow. India is one of the main producers of fenugreek, a spice produced today around the world.
Fenugreek seeds are often used in the composition of pickles. They are indispensable in recipes such as Indian curry Pumpkin (Kaddu) or sambhar. For use in curries, it must first be soaked. It can also be used as cumin seeds or black mustard, fried in oil at the beginning of the preparation of an Indian dish.
We can make a powder with the seeds for some dishes. It requires to grill them to soften the taste because the seeds are bitter. They can also be a component of the curry powder.
We can also germinate the seeds and then use them to garnish salads.
We use the dried fenugreek leaves, called Kasuri methi, mainly in the Indian curry. Their strong flavor requires to put in small quantities in the end of recipe.
Green leaves are used in recipes such as Aloo methi (fenugreek leaves fresh green, potato and spices) or spinach or to prepare Paranthan.
This is a good remedy to fight against diabetes and to relieve joint pain. The aroma released by the dried leaves added to the dish has the property to hunger!
