Lemongrass is renowned for its lemony flavor in Asian cuisine. It also has its place in India, in a very specific way:

  1. Lemongrass tea
    This is the main use of lemongrass in India. Called Gavati Chaha (grass tea) in some regions, it is widely used to prepare comforting teas. Water is boiled with black tea, ginger, cardamom, and lemongrass. The powdered version is very convenient for preparing a quick cup without having to steep long fresh stalks.

  2. Ayurvedic preparations (Kadha)

  3. Indo-Asian cuisine

In restaurants in major Indian cities, lemongrass powder is used to flavor clear vegetable soups, certain fried rice dishes, and coconut milk curries inspired by Thailand but cooked with an Indian twist.

  4. Modern Indian desserts
    Although it is not ancestral, lemongrass powder is increasingly used by modern Indian chefs to flavor ice creams, creams, or syrups that will accompany classic desserts, bringing a touch of freshness without the acidity of lemon juice.
