Indian legumes include a wide range of essential pantry staples: red lentils (masoor dal), yellow lentils (toor dal), chickpeas (chana dal), mung beans (moong dal), and urad dal, among others. Each has its own texture, flavor, and cooking time, and they are used in a variety of dishes - from classic dals to salads, fillings, and snacks.
Dry Indian food products generally keep for 12 to 36 months after production, depending on the spice and storage conditions. The date shown on the package is a Best Before End (BBE): beyond this, the food products are still edible but may lose some aromatic intensity. To preserve their flavors, it is recommended to store them in an airtight container, away from light, moisture, and heat.
Indian lentils (daal) are extremely versatile and form the base of many vegetarian recipes. You can make dals such as dal tarka or sambar, curries like chana masala, lentil-based pancakes or crepes like dosas, and fried snacks such as vadas. Using legumes allows you to prepare protein-rich dishes suitable for everyday meals as well as festive occasions.
"Legumes are a cornerstone of vegetarianism in India. Rich in protein, they provide both satiety and enjoyment. To gradually reduce meat consumption, incorporating more lentils into your meals is an excellent way to diversify your diet."
