Fenugreek is an aromatic plant. It is not only used as a spice but also as a vegetable and herb. Also used in Indian cooking, dried leaves have a very strong smell. India is one of the main producers of fenugreek, a spice produced today around the world.
We use the dried leaves, then called Kasuri methi, mainly in the Indian curry. Their strong flavor requires to put them in small quantities in the end of recipe.
Green leaves are used in recipes such as Aloo methi (fenugreek leaves fresh green, potato and spices) or spinach or to prepare Paranthan.
Fenugreek seeds are often used in the preparation of pickles, they can also be part of curry powder.
This is a good remedy to fight against diabetes and to relieve joint pain. The aroma released by the dried leaves added to the dish has the property to hunger!
