Coriander is also known as cilantro. In India it is called Dhania. It is a annual plant which leaves look like parsley but its aroma and taste are very different. After flowering, it leaves seeds which are, like the leaf, much used in Indian cooking.

How to use coriander

In Indian cuisine, you can use fresh coriander leaves and fruit or seeds in the same recipe, because they do not give the same flavor.

Coriander seeds are ground into powder to use in curries. It is also used in a basic curry powder.

Coriander seeds are also used, such as cumin seeds and mustard in hot oil for its flavor.

The fresh coriander leaves are added when the dish is finished cooking, just before serving.
