What is Indian Rogan Josh?


This dish is distinguished by its bright red color given by Kashmiri chilies, more famous for their color than their spiciness, and the roots of a variety of orcanette, used for their coloring power. Red meat, lamb or mutton, is braised in very hot oil then simmered in this red and mild curry to make it tender.
This technique introduced by the Mughals applied to regional Indian products has become a local emblem.
