The term Tandoori brings together what is cooked in the Tandoor oven. The traditional version of this four-cylinder is in terracotta and a few pieces of coals are enough to raise the temperature to over 400 °.
There are skewers of meat, Paneer or vegetables and the breads are baked by sticking them on the wall. Foods grilled at a very high heat are marinated in yogurt with spices to make them less dry. This technique which brings softness and smoky taste is very characteristic.
