Garam masala is a mixture of so-called hot spices with variable ingredients including coriander, cinnamon, cumin, ginger, pepper, cardamom, cloves, fennel, bay leaf or star anise.
It is widely used in the north, where it is often added at the end of the recipe. The Indians call a very spicy dish Tej and use the term Garam to talk about heat.
