North Indian curry paste with warming spices, tomatoes and ghee, traditionally used for the preparation of hearty vegetable and meat dishes.
For the preparation of delicious curry dishes in the original Indian style: briefly sear the vegetables or meat with the onions and fresh ginger in the ghee, then add the Garam Masala paste (1 to 2 tablespoons per serving) and let it be for now. For added flavor, marinate pieces of vegetables, meat or tofu in the curry paste overnight. For a creamy sauce, stir in the cream or creamed coconut and simmer a few more minutes.
Serve with rice.
